Vegan Gluten Free Apple Pie Cookies

These super delicious apple pie cookies are vegan, gluten free and refined sugar free! I use coconut sugar to sweeten it and the apples themselves are pretty sweet, so no need for all that sugar. 

With spices like cinnamon, allspice, nutmeg and cloves, these cookies are little spiced apple pies in every single bite!

Apple Pie Cookie Ingredients

This is I admit a little more work than a regular cookie since you do have to saute the apples first, but it is so worth it, I promise! Here’s what you’ll need for these apple pie cookies. 

Let’s talk about brands! So I love Earth Balance butter for my dairy free/vegan butter. I love that it comes in stick form for baking. I am trying to find a better brand though, as the ingredients in this one aren’t great. 

For flours and oats, my go-to brand is always Bob’s Red Mill. You can even get coconut sugar from them too. For the gluten free flour blend in this recipe, you can use Bob’s Red Mill Gluten Free All Purpose Flour. That’s my go to store bought brand, but I actually make my own gluten free flour blend, using Minimalist Baker’s recipe. Her flour blend is my absolute favorite. 

For spices, I love the Frontier’s organic spices, especially their ceylon cinnamon.

Apple Pie Cookies Directions

Let’s get into it! So first things first, you need to cook the apples. I saute them over low to medium heat in a large skillet with butter and cinnamon. Cook them until they are fork tender. Then you can set them aside to cool while you make the dough. 

Since these cookies are vegan we need an egg replacer. I opted for a flax egg. In a small bowl combine the ground flaxseed and water and let sit for 5 minutes.

Now in a large bowl, beat the butter. Then add the coconut sugar, applesauce, vanilla and flax egg. Once that is all beaten together you can mix in the flours, oats, baking powder, salt and spices. 

Fold in the pecans and apples and they are ready for the dough is ready.

Evenly divide the dough into twelve portions on a large baking sheet with parchment paper. I formed them into balls and them flattened them with my hands. You can use a spoon too. They’ll bake at 350F for about 13-16 minutes until they start to brown. 

It took me a few test batches to get this recipe right. The issues I was running into was the lack of apple flavor and like a grainy gluten free flavor. I put 2 whole apples in these cookies to make sure it tastes like apples! Then I lessened the amount of gluten free flour blend because that’s what was giving it an odd flavor. The flour blend is needed for texture, but too much is not a good thing.

Vegan Gluten Free Apple Pie Cookies

  • 2 Apples, cored and diced (about 2 cups)
  • 2 Tbsp Vegan Butter
  • 1 Tsp Ceylon Cinnamon

Flax Egg

  • 1 Tbsp Ground Flaxseed
  • Tbsp Water
  • ¼ Cup Vegan Butter, softened
  • ¼ Cup Applesauce
  • ½ Cup Coconut Sugar
  • 1 Tsp Vanilla Extract
  • Cups Almond Flour
  • ½ Cup Gluten Free Flour Blend*
  • ¼ Cup Gluten Free Oats
  • 1 Tsp Baking Powder
  • ½ Tsp Salt
  • ½ Tsp Ceylon Cinnamon
  • ¼ Tsp Nutmeg
  • ¼ Tsp Allspice
  • ¼ Tsp Cloves
  • ¼ Cup Pecans, chopped (optional)


  • In a large skillet on low to medium heat, add 2 tbsp butter, apples and cinnamon. Saute for about 10 minutes until the apples are fork tender. Set aside.
  • In a small bowl, mix ground flaxseed and water. Let sit for 5 minutes.
  • In a large bowl, beat butter. Add coconut sugar, applesauce, vanilla extract and flaxseed water mix. Blend together.
  • Mix in almond flour, gluten free flour blend, oats, baking powder, salt and spices. Mix in optional pecans and the cooked apples.
  • Preheat oven to 350°F. On a large baking sheet with parchment paper, scoop 12 evenly spaced balls of dough. About 2 tablespoons full each. Flatten them out a little with a spoon or your hands. Bake for 13-16 minutes until slightly browned.


*You can use any all purpose gluten free flour blend, but I love to use a homemade blend by Minimalist Baker.
